Bubble tea….my way

Who didn’t try a bubble tea? At this point I am pretty sure you know what all the fuss is about.

Well….what if I tell you I can enjoy my one home made, with no powder needed or fancy machinary?

 

Let’s start with a classic, well at least in our house…

Matcha bubble tea.

Sounds difficult?Well…it is the simplest one in reality. My 12 year old would make it far to ofter, or maybe she does and I don’t know about it.

 

What you need:

tapioca pearls

brown sugar

matcha

water

milk of your choice (I prefer oat milk but any milk can do: almond, cashew or even dairy milk)

Tapioca pearls

Easy as 1, 2, 3…ok 5:

  1. Bring 10 cups of water per 1 cup tapioca pearls to boil in a large pot.
  2. Slowly add the tapioca pearls to the water. Stir gently.
  3. Wait until the tapioca pearls are floating at the surface of the water. Cover the pot. Boil for 2-5 min. at medium heat. (The longer the pearls boil, the softer they become). Turn off the heat and steep for another 2-3 min.
  4. Remove the tapioca pearls and leave them in cold water for 20 seconds.
  5. Place the tapioca pearls in a dry bowl and add brown syrup or honey to taste

Now, the brown sugar. First of all don’t worry, you don’t make this every time, stored properly it can stay in the fridge for a month (not in my house as it finishes before that but ..you know what I am saying)

What do you need:

– 2 cups packed brown sugar

– 2 cups water hot

– vanilla extract

Now this is easy as 1, 2, 3:

1. put boiling water in a heat resistant bowl with the brown sugar, stirring until brown sugar is completely dissolved

2. add vanilla extract to taste mixing to combine

3. let cool down completely and store in a jar with lid in the fridge

Light brown sugar will give you a lighter caramel taste, and dark will make the caramel a bit stronger.

You can add other flavors to the syrup if you want (cinnamon, nutmeg….) or stay tunned and we will get to how to make syrup using loose leaf tea (that’s my favorite part)

Now, for those who are not very familiar with how to make matcha: it’s easy. I know I am repeating myself but the kids in my house that actually reach the counter make it themselves.

I will start by saying that if you use Matcha or Moga Cha the process is the same.

How to Prepare Matcha

  1. Scoop 1-2 measures matcha into a cup using a bamboo scoop.
  1. Add 60ml hot water. For best results use water around 70-80 C (when bubbles start to form on the buttom of the pan, before the vapors start to show)
  2. Whisk vigorously in a zig zag motion until the tea is frothy with a bamboo whisk (or do it lazy way with a manual milk frother)
  3. Enjoy

If you just want to enjoy like this you can ad sweetener if not, let’s put our bubble tea together

  • put tapioca pearls in the mug
  • put ice-cubes  on top and pour milk
  • pour the matcha on top to create a beautiful and delicious drink
  • stir and ENJOY
