Oriental Beauty – also called Champagne Oolong – is one of Taiwan's most treasured teas, and top of my personal favourites.
Tiny leafhoppers nibble the leaves in summer, and the plant's response creates a natural honey-like aroma. The result is a sweet, tangy, fruity cup that sits somewhere between a green and a black tea.
Only small quantities are made each year, so enjoy it slowly – it'll give you 3 to 5 beautiful steeps.
How to prepare:
quantity: 12 - 13 g/l (approx. 3g per cup)
temperature: 80 C
brewing time: 3 to 4 minutes
Multiple infusion: can hold 3 to 5 steeps
Food pairing: fruit, desserts, puddings and spices such as garam masala, cumin and chili. Simply wonderful with duck

Oriental Beauty can only be made in summer, after small leafhoppers (Jacobiasca formosana) have bitten the young leaves. Because the gardens rely on these insects, they can't use pesticides – and only around 40% of the harvest makes the grade.
It's oxidised to about 80%, close to a black tea, so expect a rich amber cup with honey and ripe fruit notes. The best leaves show a mix of silvery-white tips and dark red-brown leaves.
Lovely with fruit, puddings and spiced dishes – and simply wonderful with duck.
