Ingredients: green yerba mate.
Mate is made from the leaves of Ilex paraguariensis, a holly tree native to the subtropical forests of South America. 'Green' mate is unroasted, giving a fresh, vegetal flavour.
Brew it in a cup or teapot, or try it the traditional way in a gourd with a bombilla straw, topping up with hot water through the morning.
